INTRODUCTION
 
Nutrition and healthy eating have numerous positive effects on cardiovascular health. In this module you will become familiar with general healthy eating guidelines, and the specific nutrients and eating patterns that promote heart health. In addition, you will review current evidence and guidelines for nutrition management of cardiovascular disease risk factors.
 
LEARNING OBJECTIVES
 

THE LEARNER WILL BE ABLE TO:

  • Describe adult nutrient requirements and general healthy eating guidelines, including Eating Well with Canada’s Food Guide.
  • Explain the key components of adult nutrition assessment.
  • Apply knowledge of current evidence and guidelines for nutrition management of cardiovascular disease risk factors, including dyslipidemia, hypertension, diabetes and obesity.
  • Recognize nutrients and eating patterns that may modify cardiovascular disease risk factors.

LEARNING ACTIVITIES
 
  • Keep a 3-day food record. Write down everything you eat and drink for 3 days; include two weekdays and one weekend day. Be sure to include portion sizes and amounts.
  • Analyze your food record; use online or written tools (listed below) to determine your average daily intake for the following nutrients:
    • Calories
    • Carbohydrate
    • Protein
    • Fat
    • Saturated Fat
    • Trans fat
    • Monounsaturated fat
    • Polyunsaturated fat
    • Cholesterol
    • Fibre
    • Sodium

    Tools to help analyze your food record:
    • Calorie/Nutrition Counting Books: Look up foods individually to find their nutrition information.
    • Online tools:
      • Fitday: Sign up for a free account and enter foods into daily journal. Provides total daily nutrient intake, including macronutrients and micronutrients.
      • Calorie King: Free nutrition database allows you to search for nutrition content of individual foods.
      • LoseIt! Free application for iPhone. Enter foods into daily journal and application will analyze total daily nutrient intake, including macronutrients and micronutrients.

    After analyzing your food record, consider the following:
    • What percent of your calorie intake is from carbohydrate, protein, and fat? How does this compare to nutrition guidelines for macronutrient distribution?

    • Take a closer look at your fat intake. What percent of your calories come from saturated, trans, monounsaturated, and polyunsaturated fat? How does this compare to recommendations for prevention and management of cardiovascular disease?

    • Identify foods in your food record that are sources of omega-3 fat. How many servings of fish did you consume in the 3-day period? What is the recommended intake of fish and omega-3 fatty acids for primary and secondary prevention of heart disease?

    • Look at the following link to see the soluble fibre content of selected high soluble fibre foods: http://www.nhlbi.nih.gov/chd/Tipsheets/solfiber.htm. How much soluble fibre are you getting from these foods each day? How much soluble fibre per day is recommended to help lower cholesterol?

    • Reducing dietary sodium may help to prevent and manage hypertension. What is your average sodium intake? What is the recommended sodium intake to prevent and manage hypertension? Which other nutrients have been shown to reduce blood pressure?

  • Using the Mayo Clinic Calorie Calculator, determine your estimated daily calorie requirement.
    • Compare this to the number of calories you are eating according to your food record.
  • Arrange to go on a Grocery Shopping Tour at a local grocery store with a dietitian
